Paneer Corn Kabab/Cutlet

Hey all , posting this recipe before I forget it :D I just tried it for my brother who goes to the gym. And he wants all protein stuff to eat. Do try and I am sure u'll will love it :)





Makes : 15 kababs

Ingredients
1 tblsp oil
Sweet Corn (boiled) - 1/4 cup
Paneer (mashed) - 100 gms(used half amul paneer packet)
1 tsp - ginger garlic chilly paste
1/4 tsp - red chilly powder
1/2 tsp garam masala
1/8 tsp- green cardamom powder
some coriander leaves, chopped
1 tblsp oats
1 tblsp rice flour
1 egg
pinch of baking soda
salt

Procedure :
Its actually very simple ! Just mix all above ingredients. Even egg , add directly . I added egg because mixture was quite dry and needed some binding agent.
For vegetarians , use little cornflour(1 tblsp) mixed in milk(2 tblsp ) instead of egg.

Heat a tawa, add little oil (infact if you are using nonstick tawa , you can just brush it with oil). Make small balls of above mixture and flatten to form flat round kababs.
You can use cookie cutters too to make different shapes. Fry on both sides till browned !! Serve with tomato sauce or green chutney.

Paneer Stuffed Tomato

Hey all , I have been busy with cake workshops and orders. Last weekend was very tiring , finished another cake baking workshop yesterday. N here I am taking rest on Monday :D I got up late and ensured that everything went slow. Really slow at my pace LOL. And by evening I had recovered from all the fatigue .. hushh.

So there was some fresh paneer and I didnt want to make any kababs or cutlet. So thought of trying something new . n here it is , was yummy and made with only 1 tblsp oil !! lalalala :D

Do try n let me know how was it

 

Serves : 2
Ingredients :
1 tblsp oil
2 Large tomatoes
cheese (optional)
3 tblsp breadcrumbs

To be blended :
100gm  paneer
2 pudina leaves
1/8 cup coriander leaves
1/4 tsp garam masala
1/4 tsp chaat masala
1/4 tsp coriander powder
salt
1/4 tsp pepper


How to do ??

1. Use a mixer to blend everything mentioned in blend section. Mix 2 tblsp bread crumbs in this mixture
2. Cut tomatoes in half , and scoop out all seeds . Now add little cheese (optional) into the tomatoes and then fill them completely with paneer mixture.
3. Heat a pan and add 1 tblsp oil , deep the top of tomatoes (with filling) in some breadcrumbs and place tomatoes on pan. Keep for 2 minutes till dey brown. Now turn them and close the lid and cook for 8-10 minutes or till you can see juices oozing out of tomatoes. Its done !!
4. You can even bake them in oven at 200 C for 15 minutes.

Apple Paneer Salad with toasted pisatichio

Hi der !

I know , long time ! Been busy with many cake orders . But I have decided I am going to blog more often now :) So I have these days when I realise I am putting on weight ;) and suddenly I start eating healthy stuff :D Hence the salad :P You can have this 1 salad bowl at dinner and it has enough proteins and fibre which will not make you hungry and also you wont put on much weight and this is good reason to say yes to apple for those who dont like apples :D ! Try it out and let me know ;)



Ingredients 
1 Apple(use crunchy apples)
1 Tomato
Paneer (100gm) , cut into small cubes
1 tsp Lemon juice
2tblsp pistachio
Salt and Sugar to taste
1tsp Oil for frying 
1 tblsp tomato sauce

Procedure 
1. Cut apple into thin long strips , and drizzle lemon juice over it so that it doesnt get brown and keep in fridge for sometime. They will remain crunchy this way.
2. Add salt and pepper to paneer cubes and add 1 tblsp of tomato sauce to this mixture. Now on a hot pan , drizzle very little oil , (about 1 tsp)  and fry these paneer cubes  till they start browning .
3. Also dry toast pistachio for around 3 minutes , remove from heat , let it cool. Then just crush dem roughly.
4. Now to assemble .. cut tomato , add apple strips  , salt and sugar to taste and mix properly. Put salad in bowl , add paneer cubes and toasted pistachios.

Bhindi Raita / Ladyfinger Raita

Hi der !

Today I am sharing a simple receipe for Bhindi lovers ! I love crispy Bhindi fries .. you too ? then you  will love this receipe. Its not a main dish though , to be accompanied by veg pulaav or masala bhaath or with rice curry also. Try and let me know :)


Ingredients :
  • 10 Bhindi / Ladyfingers
  • 1 green chilly finely chopped
  • 1 tblsp cumin seeds(jeera)
  • 1 tblsp mustard seeds
  • 1 tsp asafoetida (hing)
  • 1 cup curd
  • 2 tablespoon ghee/oil
  • 6-7 curry leaves
  • Salt and sugar to taste 
  • Finely chopped coriander leaves  

Procedure :
1. Chop Bhindi into thin slices horizontally and a pinch of salt to this.  In a pan ,1 tablsp oil and add finely sliced bhindi and green chilly. On medium heat fry these till they turn crispy brown. Remove on a plate to cool.
2. In a bowl , slightly beat the curd and add salt and sugar as per taste.
3. To prepare tempering , heat oil/ghee in a small pan, add jeera , mustard seeds, hing and curry leaves. Once mustard seeds stop spluttering turn off heat .
4. Add crispy ladyfingers to it and mix well. Pour the tempering over this and garnish with coriander leaves. Done ! Serve with pulaav or biryani !

Note : You can fry bhindi and keep , but see that you mix it with curd just before serving.

Cheesy Caramelized Onion Egg Sandwich

Hi der !

How are you'll doing ? :) I am at home these days .. not at work :( Got upper back problem and resting at home. Its pretty boring actually , as I am told not to sit for long hours and being IT engineer I cant avoid it . Duno how I got this back problem because I always took care about ma posture and ma laptop/desktop screen or chair alignment .. But as my doc said .. You all IT people have this gifted !! :( And we all are so addicted to PC and mobile its so difficult to not sit for hours :D But because of this back pain I realized actually how much time I have .. and so many other things I can do other then checking discounts on shopping sites , whtsapping .. checking status and DPs, checkin FB .. So I have a lot of time now :D So today for breakfast I made this easy sandwich , which fills you up till lunch ! Just one sandwich is enough . Its full of proteins and carbs.




Serves : 1
Makes : 1 Sandwich
Preparation time :5 min
Cooking Time :10 min
Ingredients :
  • 1 Fried egg with salt and pepper sprinkled
  • 1 medium onion sliced finely
  • 1 Amul cheese slice
  • 1 tablespoon tomato ketchup
  • 2  Sandwich bread slices
  • 1 tablespoon butter
  • 1 tablespoon oil
  • Salt and pepper to taste 
  • Finely chopped coriander leaves (optional) 




Procedure :
1. In a pan , add oil and finely sliced onions. To this add salt and pepper and cover pan with lid and cook till onion is seen translucent or just cooked on medium flame. Then on high flame , with continuous stirring , fry onions till they are brown and caramelized . You can then add coriander leaves.
2. Now take one slice of bread , apply tomato ketchup and place the fried egg on it.
3. Spread the caramelized onion on top of it , place the cheese slice and finally the bread slice and press it.
4. Now apply butter on outer sides of  bread slices and either grill it on sandwich maker or place it on hot tawa till both sides are crisp brown. I prefer tawa ! 

Sandwich is ready !! Enjoy

Paneer & Cheese Stuffed Veg Cutlets

Hey guys .. I am back :) Last week was exciting as well as boring. Exciting because I made a superdelicious pineapple upside down cake , recipe of which I will post next ... & boring because I had back pain n I had to take leave and couldnot go to office. And to add to this , I bought wrong mobile. :( I am super sad.. ohh yeah !! A mobile means a lot to me .. I always do a lot of research before I buy a mobile and I am always proud abt it. Last mobile I was using was HTC  Desire X which had an awesome  camera , lovely headphones and sound and real smooth touch .. probably the best phone I had. But since I dint put any scratch guard for it and handled it reallly rough the screen behaved preety badly for last few weeks for which I got frustated and just went in a shop and grabbed Samsung Galaxy Core Prime and its a real disaster which I released next day ! Now its on OLX and quicker .. waiting for someone to call :D:D

Anyways , We had a long weekend this time due to Holi on Friday and was busy because of my best friend's engagement. It was real fun ! On Sunday my cousin paid a visit at my place so tried out this cutlets which turned out amazing ... Hope you'll like it too


Serves : 4
Makes : 8 Cutlets
Preparation time :10 min
Cooking Time :15 min
Ingredients :

  • Cutlets :
         Boiled and grated or mashed
         (3 Potato + half Beet Root + 1 Carrot )
         1/2 tsp jeera powder
         1 tsp coriander powder
         1 tsp ginger garlic paste
         1 medium onion , finely chopped
         1 green chilly , finely chopped
         2 tablespoon corn flour  mixed in water
         1 tsp Garam Masala
         1/4the cup chopped coriander leaves
          2tablspn Corn Flour
          2tablspn Rice flour          
         Salt to taste


  • Stuffing 
         5 tablespoons of grated paneer
         2 Amul cheese Cubes grated
         some dryfuits like kaaju , kishmis finely chopped
         1/4 tsp garlic powder       

         Bread Crumbs
         Oil for shallow frying

Procedure
1. Heat a pan , add 1 tablespoon of oil and fry onion and green chillies till onion turns translucent.

2. Remove it from heat and add into a bowl. To this add all ingredients mentioned under Cutlet section and mix well

3. Also mix all ingredients mentioned under Stuffing and keep aside.

4. Now make balls out of stuffing mixture and flatten them .  Now take the cutlet mixture , make balls out of it , flatten it and in the center add stuffing and cover it well . Dip your hands in water when you are working with Cutlet Stuffing, so that it doesn't stick to your hands. You can even shape the cutlets as you want using cookies cutters.

5. Next dip the cutlets in mixture of water and cornflour and then roll them into breadcrumbs. Keep the cutlets in fridge for around 30 min and then shallow fry till golden brown. Serve with chutney or tomato sauce.

Veg Healthy Kathi Roll

Hi all .. I was at home today and wanted to eat something nice for snacks. In Goa , Most of the Hindus follow some days like Monday, Thursday as respect to their respective Gods and we do not eat any non veg items neither we eat onion - garlic. So on such days , it becomes very difficult for some of us to think what to cook ? So I tried this veg rolls which are kind of modified version of Kathi Rolls. Kathi Roll is a street food from Kolkata, in which skewer roasted kebabs are wrapped in a paratha. Slurrrp.. But since I am pure veg today , I came up  with this healthy and no onion no garlic recipe of Veg Kathi Rolls. I am sure you'll will like it. I prepared some easy cutlets which I replaced instead of Kebabs and you can use Roti/Chapati instead of Paratha.

Serves : 4
Makes : 6 Rolls
Preparation time :10 min
Cooking Time :10 min
Ingredients :
  • Cutlets :
         Any choice of your vegetables , grated . I used below combi
         (Potato + BeetRoot + Carrot )
         1 tsp jeera
         pinch of Hing/ Asofoetida
         1 tsp finely chopped green chilly
         1 tsp grated ginger
         1 tablespoon rice flour / corn flour
         1 tsp Coriander powder
         1 tsp Garam Masala
         1/4the cup chopped coriander leaves
         1 tsp Everest Chaat masala
          Rawa
         Salt to taste

  • Pickled 2(Chop below veggies as long strands)
          Finely chopped cabbage, capsicum , carrot
          1 tablespoon lemon juice
           Salt to taste         

4 Chapati/ Roti/ Paratha


Procedure
1. Mix all ingredients mentioned for Pickled veggies and keep, so that vegetables start getting moist yet crunchy

2. Take a pan with a very little oil and place on gas on medium heat. Add jeera seeds and saute for 30 seconds. Then add Hing powder , ginger and all grated vegetables and saute for around 4 min.

3. Remove the pan from heat and allow the mixture to cool. After its cooled down , add  finely chopped chilly , Garam Masala , Chaat Masala , Coriander Powder , Rice flour , Coriander leaves and salt to taste. Ensure that the mixture is semi dry, if not you can add more rice flour to it.

4. Now make balls out of this mixture and flatten them on Rawa to make small cutlets. Shallow Fry this cutlets till done on both sides.

5. Now take a Chapati and apply butter and sprinkle pepper powder on it. Place the pickled vegetables on the  chapati  and pieces of cutlets. Now Roll the chapati. Done Kathi Rolls are ready to be served.

French Onion Soup

Its been a long time ! I was busy with work and a new venture that I have started ! Yes .. My love for baking inspired me to bake cakes not only for my family but also spread this happiness into lives of others :) I take orders now for birthday , anniversary or any occasion cake . I had no clue I would be doing this any time , but it started somehow and now there is no looking back. I will soon share some delicious yet easy cake recipes. For now , I am posting this soup which I tried yesterday. This soup is very light and gives you enough warmth in winter yet doesn't fill you up. Happy cooking :)




Servings : 4
Preparation Time : 5 min
Cooking time : 20 min
Ingredients :
2 medium sized onions (finely chopped)
2 garlic pods finely chopped
1 tablespoon butter + 1 tablespoon oil
1 tsp fresh pepper powder
1/4 cup finely chopped coriander
1 tablespoon soya sauce
1 cup of milk
4 cups of water
1 veg Maggie Cube
Salt to taste

Procedure :
1. Take a non stick pan and put butter and oil and turn on the gas on medium heat . Add chopped onions once butter has melted and saute till onions are browned. (If you have induction cooktop then this can be done in 4-5 min which takes otherwise a bit longer on gas ) Tip : For onions to cook fast , cover n cook & secondly add pinch of salt.

2. Add chopped garlic to browned onions and saute for a minute.

3. Now add 4 cups of water, soya sauce , maggie cube and pepper powder.

4. Once this water starts boiling add milk. Taste before you add salt at this step, since we added maggie cube which also has salt, hence add accordingly

5. As the soup comes to a boil , add fresh coriander leaves to this . Soup is ready !!! 

You can serve this with toasted bread with cheese grated on top. If you are diet conscious you can have it as it is .

Cream of Mushroom and Broccoli Soup

Hi all

Yesterday was a Sunday and I had decided that I would be trying one of those stuffed pull apart bread rolls. but I was in no mood to bake or cook anything. But in the evening my mood was alright :D and I went into kitchen and checked out what I could make for dinner. My Aaee had already made fish for dinner , so then i decided to make a light soup. There was mushroom and broccoli , which reminded me of white sauce first and then I thought I would use same idea and make the soup. Actually this soup is supposed to be very creamy but since I had to eat fish after that for main course I thought of using milk instead and hence totally replaced cream with milk. So if any of u'll are dieting you'll can go for this soup and rest can add a a couple of spoonfuls of cream :) This soup is very easy to make and takes hardly 15-20 minutes ! I forgot to click pics and just gulped the entire soup bowl :( Will surely post a pic when i'll make it again :) I found a pic online that looked similar.. I am sure you are gonna love this . Serves : 4 bowls

Ingredients :
1/2 cup of sliced mushrooms
1/2 cup of broccoli
1 large onion chopped finely
3 garlic cloves chopped finely
2 tablespoon All purpose flour(Maida)/ Wheat flour
3 cups of water
1 cup of milk
1/4 cup finely chopped coriander
grounded pepper - 1/4 tsp or as per taste
salt - as per taste
Veg Maggie cube - 1
1 Bay Leaf
2 tablspoon ghee/butter

Procedure :
1. Heat butter in a soup pan and add Bay Leaf and saute. Then add chopped onions and garlic and cook till onions turn slightly brown in colour . (Tip : You can save gas by adding a pinch of salt to this and covering and cooking it.)
2. Once the onions are done , add sliced mushrooms and broccoli and mix well. Cover and cook for around 6-7 minutes or till you see mushrooms going brown .
3. After some time you will see the juices oosing out of mushrooms . Remove the lid and cook on high heat till water evaoporates . Now add the flour and cook for around 2 minutes or till the floury taste goes away.
4. Then add 3 cups of water to this , pepper , salt and Crushed Maggie cube powder. Once this starts boiling add 1 cup milk.
5. Once this bubbles up , add coriander leaves and turn off the heat and your soup is ready to serve.


Tips : You can have this as a light meal or if you want to have soup as a complete meal itself  add in some spoons of cream and have it with toasted bread with cheese sprinkled on it !!

Veg Healthy Burger out of Kabuli Chana !!

Hi all, Yeah .. you read the title right. :D I myself wouldnt have thought of that burger . Actually its shravan going on now and ladies have haldikumkum and many other activities going on. So for haldi kumkum usually chana is ditrbuted i.e. boiled chole chana and we cant have it all and it ends up being spoiled sometimes.

Yesterday my mother was also invited for a haldikumkum and she was home with chole chana as prasad. She reminded me to have it when i neglected for the first time. Then suddenly i thought ... y not ? I told her keep it in fridge i will have it for breakfast. And next day i prepared a pattice out of it and used it in burger :)
You can even have them as cutlets for snacks or as starters 


Ingredients

Burger Buns

For topping:
   Onion-sliced into round
   Tomato-sliced into round
    Cabbage Leaf / Lettuce leaf

Oil for shallow frying
1 tablspn Corn flour
Rava / Breadcrumbs
1 small onion finely chopped

To be grinded in mixer into coarse mixture
   1 small cup kabuli chana/ chole (boiled)
   1 tsp ginger garlic paste
   1/4 the cup coriander leaves
   1 tsp garam masala
   2 green chillies
   1/2 tsp lemon juice
   salt

Procedure :
1. Get the above ingredients grinded into coarse mixture without adding water and add finely chopped onion to it
2. Add one tablespoon of corn flour to it so that it will add a crispiness to pattice when fried.
3. Then make small balls out of this mixture and  press them into round shape to form pattice , then coat them using breadcrumbs/rava and shallow fry in oil on a hot pan with medium heat.
4. Now cut the bun into half. Apply tomato ketchup, place a slice of Amul cheese , lettuce leaf , pattice , tomato and onion slice. You can even use mayonnaise of your choice or whatever u like ! Its your personalized burger :)

Malwani Prawns Stuffed Squids !!

Malwani Prawns Stuffed Squids !! 

Hey guys ! So my this recipe is dedicated to all squid lovers ;)

I recently got this Malwani masala and was dying to use it ! And then just in market when i saw squids it struck me . ... I knew what I wanted to do and I imagined how it wud taste .. and was very happy that it turned out exactly how i wanted. Very few dishes give you that satisfaction of exactly what you want :)



Ingredients:

10 Squids
1 bowl small prawns
2 medium onions finely chopped
1 potato finely chopped
1 tomato finely chopped
6-7 garlic pods finely chopped
2 green chillies finely chopped
1 tablespoon malwani masala
1 tsp turmeric powder
2 tsp red chilly powder
salt

Procedure:
Cleaning Squids and Prawns
Many people don't like to clean squids, don't worry you can get them cleaned in market. But those who intend to do it at home .. its very easy. Take a squid , now it has this tentacles and one fine flat bone buried kind if in its body. you can remove it with hand itself . Some people use this tentacles to stuff inside .. I dint do that way. So I got everything removed from the squid body leaving it like a conical shaped bag. Also there is a thin brownish layer on the skin which also was removed. You can then wash them once in water.

Now apply salt + 1 tsp turmeric  powder+ 1 tsp red chilly powder + 1tsp malawani masala and keep this for minimum 2 hours. More you keep them marinated , less time they will take to cook as they will get more soft. If you are preparing it for dinner you can keep them in fridge.

Apply salt and 1 tsp turmeric powder to cleaned and washed prawns and keep for 20 min. Remember if prawns are big in size cut them short since we need to fill it inside squids.

Stuffing
Heat a pan on medium heat , add 1 tablspn of oil and add onions. Saute them till they go brownish( add little salt to make this process fast). Add finely chopped garlic and chillies and saute for a minute.

Then add chopped potato and tomato and cover and cook till potato is cooked and tomatoes turn soft. Now add all the masala powder mentioned above in ingredients (i.e. haldi , red chilly powder , malwani masala). Last add prawns , salt and cover & cook for 2-3 minutes as prawns get cooked very quickly.

Remove it from heat and let it cool .

Now stuff the squids with this  filling keeping little space on top. Insert a toothpick as if you are stitching the mouth of squid.

Now deep them in rava and shallow fry on low heat. While frying remember not to fry for long as they can get very chewy.
Add 2 tablspoon oil in a frying pan, put squids in pan , cover n cook for 1 minute. Now remove the lid and cook for 1 minute. Now turn the squids and again cover and cook for 1 minute. Remove the llid and cook for 1 minute. Then turn them sideways and cook for 1 more minute. Thats it ! :D

Vegetable and cheese stuffed capsicum/tomato

Hi all
I tried out today a yummmy dish which is so simple to make ! I am sure ull will love it too :-) I made them as starters.. had 2 capsicums and 1 tomato at home n all ingredients just fell into place ! :-D
Ingredients :
For the stuffing:
1 tblsp oil
Cabbage - finely cut 1/2 cup
Carrot - small diced 1/2 cup
Capsicum - small diced 1/2 cup
1/2 tsp jeera powder
1 tsp garam masala
1/2 tsp pepper powder
1 veg Maggie cube
Lemon juice
Salt
3 capsicum/tomato
Tomato sauce
2 Amul cheese cubes grated


Procedure
1. For the stuffing first heat oil in a pan. And all the cut vegetables to the pan and cover and cook for 15 minutes.
2. Add all other ingredients mentioned in the stuffing section above. Cook for 2 more minutes n turn off the heat and let it cool.
3. Now take capsicum or tomato and slice it on top to make a opening. Scoop out all excess from inside so that stuffing bcmes easier. You can even use this scooped out vegetable in the filling rather then throwing it out . If you are using tomato , cut a small slice at the bottom  taking care that it doesn't make a hole at the bottom so that the tomato does not fall and balances well .Tip : remember to pick capsicum tomato which are fat rather than elongated once. It will help to rest them on flat surface n provide gud balance.
4. Now brush the inside n outside f capsicum or tomato with butter. Brush inside with tomato sauce . Now put 1 layer of vegetable stuffing and 1 layer of grated cheese.  Continue till the entire capsicum fills up.  And sprinkle remaining cheese on top.
5. Now preheat otg on 150 degree fr 10min and then keep capsicum or tomato in a butter lined tray . Bake this in otg for around 15-20 min on same temperature or till skin of tomato or capsicum starts to wrinkle.

Corn and mushroom canape in white sauce !


This is for those who like Italian food and Cheeese :) I and my friend amrita had tried this receipe for one competition n it was a hit ! She had tried to make this as healthy as possible by replacing maida in white sauce by wheat flour and trust me .. it tastes yummy :) 


Ingredients :
1 cup boiled corn kernels
1/2 cup mushrooms (diced ,sauted in salted butter till cooked)
3 tblspn wheat flour
1 cup milk
1 tblspn chilly flakes
11/2 tblspn oregano
1 cube Amul cheese grated
1 tsp pepper powder
1 tblspn low fat butter
canapes / crunchy toasted bread
salt

1. Put butter in a heated pan and saute wheat flour for some time.
2. Now slowly add milk , enough to make it saucy but not runny. Keep stirring constantly. You can remove it from heat if you see it getting thickened too quickly. If lumps are formed you can run it through mixer for smooth consistency.
3. Now add chilly flakes , oregano , grated cheese , pepper powder and salt. Keep it on the flame for some time.
4. You can remove pan from sauce. Its time to serve. You can even prepare the sauce and keep it in the fridge.
5. When you are serving you can add corn kernels and mushrroms and heat it on pan slightly to make it warm. You can even add a little more cheese and microwave it for 30seconds.
6. Place it into the canapes / toasted bread and serve !!

Instant wheat pancakes / Mini wheat dosas

Hi all
This receipe was borrowed from my best friend's mommy ;-)

Ingredients :
1 cup wheat flour
1/4 cup rawa
1/4 cup rice flour
1 tsp jeera powder
1 tsp coriander powder
2 tsp red chilly powder
1/2 tsp haldi
1/2 tsp asofoitida
1/2 tsp salt
1/2 cup grated coconut
Pickle of your choice
Water

Procedure :
1. Mix all the above dry ingredients.
2.  Now add water to this till it forms a smooth batter and leave this for around 30 min.
3. Now heat a non stick pan , grease it with ghee or oil . Once the pan is hot pour the batter to form a round pan cake. Cover it with lid for around 1 minute. Remove the lid and turn the  pan cake over . Remove from heat once done.
4. Serve hot with  a mix of grated coconut and pickle or chutney ! You can even stuff  the mixture of grated coconut and pickle and roll the pancakes.

Vanilla Sponge Cake

Ingredients :

200gms maida /all purpose flour
200gms butter (softened at room temperature)
200gms powdered sugar
2 eggs
1tsp baking powder
2tsp vanilla essence
pinch of salt

Procedure :

1. Beat sugar and butter till sugar dissolves
2. Beat eggs till a fluffy foam forms up.
3. Mix maida and baking powder and sieve 3 times.
5. Once we have all mixing items ready , keep oven for preheating. Preheat the oven for 10min on 180 degree Celsius. Also grease the baking tray with butter and sprinkle some maida on it . Dust off access flour.
4. Now add foamed up eggs into sugar-butter mixture and gently fold them , don't mix vigorously.
5. Add vanilla essence and pinch of salt and mix.
    If  you are using salted butter no need to add salt.
6. Now add maida to this mixture in parts. Keep on mixing to avoid formation of lumps.
    Remember to bake cake immediately  and not keep the batter for long. Cake should go in oven as    soon as baking powder hits liquid.
7. Pour this into baking tray and keep it in oven for baking for 30-35 min.
8. Oven temperatures differ , hence you can keep a check after 20 min and if toothpick inserted in the middle of cake comes out clean it means cake is done.
9. Allow cake to cool down completely and then unmould it !

Cheesy Grilled Vegetable Sandwich

Its after a long time I am sharing yummy , easy to make breakfast/snacks recipe.




Time required : 30 min
Serves : 2

Ingredients :
4 bread slices
1 capsicum
1 tomato
2 tablespoons olive oil/ any vegetable oil
1 tsp pepper powder
1 tblsp oregano powder
2 Amul cheese slice/mozzarella cheese would be excellent
Amul Butter
Salt

Procedure :
First lets get our oven pre-heated for 10 min on 160 degrees C .
In the meantime lets get our veggies cut into BIG chunks because we are gonna get them into oven which will have shrinking effect on them .
Those of you'll who dont have oven , can try this in a non-stick pan covered from top with a aluminium pot , or anything that will lock the heat .

Then mix olive oil , pepper powder , oregano and salt . Next we will place the cut veggies on a oven tray and pour the olive oil mixture on them. Make sure you get the veggies covered with oil well :)

Lets get this tray into the preheated oven for around 15min. Now these settings differ from oven to oven. What we are looking for are shrinked and cooked veggies.

Now butter the slices, on one side put tomato ketchup  and on the other side put cheese slice and  veggies ! You can then toast them on a buttered pan or grill them in a sandwich maker till the slices go light brown and cheese starts melting !!!

Eggless Butter cookies !


10-12 biscuits 

Ingredients :

1/3 cup powdered sugar
1/3 cup softened butter
2/3 cup maida
1 tablespoon rice flour
1 tsp vanilla essence
1 tablespoon milk ( if necessary)

Procedure :
1. Before you start preparing dough for cookies , start preheating the oven. I use Prestige OTG.
Function Knob pointing to -> both upper and lower heating
Temperature - 160 C
Time 15 min


1. In a bowl  take butter . Remember to take butter out of refrigerator 20min before you start. Beat the butter till it softens. Then add powdered sugar to it and whisk till sugar is mixed well and butter softens and kind of becomes fluffy.
2. Now add maida and rice flour and knead to a smooth and firm dough. You can add milk if required.
3. Grease a aluminium tray with butter and sprinkle flour, grease your hands and make small balls out of dough. Flatten these balls on your palm and place them on tray.
4. Now place the tray on central rack and bake for around 20 min. Keep a watch after 10 min since oven settings vary from one another.
5.When edges of cookies start turning golden you can stop . They will be soft and will harden after they are removed and cooled. You can then transfer them into air tight container.

Reshmi Chicken Kebab !

This dish is dedicated to Andy Allen !!

Ingredients :

8-9 pieces of chicken

1st marinade :
1 tablespoon lemon juice
1 tsp turmeric
1 1/2 tablespoon ginger + garlic + green chillies paste
salt

2nd marinade
2 tablespoon hung yoghourt
1 egg
1tsp red chilly powder
1 tsp garam masala
1 tablespoon powder of spices after dry roasting
(1 tsp shahi jeera +
1 tsp mustard seeds +
1/2 tsp meethi seeds +
1/2 tsp udid seeds +
1 tsp chana daal )

procedure :
1. Clean the chicken pieces and apply 1st marinade to it and keep for around 20 minutes.
2. Mix yoghourt , chilly powder, garam masala, dry masala powder (mentioned above). Apply this to chicken. Now add 1 well bitten egg to this mixture. Keep this marinade for an hour.
3. Now I tried this in Grill Microwave. Kept it on Grill mode for total of 30 minutes by rotating the chicken pieces after every 10 minutes.
4. Serve with mint chutney and vegetable salad !

Veg Frankie !

I am gonna tell you a very simple breakfast/snack recipe. Many a times we order pizza and they provide us with chilly flakes/oregano packs which are too much and usually and we throw them out. Don't ! You can make delicious Frankie with this and some left over chapatis, any vegetables of your choice.

Ingredients:
1 big onion
1 cup of vegetables diced long vertically
(capsicum, carrot,cabbage)
2 origano packs
2 chilly flakes
 cheese spread
soya sauce, tomato sauce, chilly sauce
salt

As a first step, in one pan we will keep vertically sliced onions to caramelize.(i.e. fry them till they start turning brown)

Secondly add oil to heated pan, and fry all vegetables. Close the lid for 5 min , that cooks them faster. Add chilly flakes, 1 tbsp of soya sauce, 1tbsp of chilly sauce and 2 tbsp of tomato sauce, and a pinch of salt.Fry it for sometime and keep aside.

Now take a chapati , place it on a heated tava, apply cheese spread in the center, sprinkle oregano. Now in the middle spread fried vegetables vertically , and also add caramelized onions.

Woaaah ! Believe me ! Its yummy :)

Veggie Delicious (no onion-garlic)

Hi all,

We usually have some days in Goa where we dont eat onion/garlic. And just in case we have a special occasion like bday parties etc on such a day, then we dont know what to make! My mom made this finger licking recipe which is a restaurant equivalent item ! So u can try it out and surprise evryone !!

Ingredients
  • 1 cup of steamed vegetables of your choice
(small squarely diced potatoe, carrot,cabbage,beans etc)
  • 1tsp paste of ginger-green chillies
  • 1/2tsp turmuric
  • 1tsp red chilli powder
  • 1tsp garam masala
  • pinch of sugar
  • tomato puree
  • 2 big tablespoon wheat flour 
  • 2 cloves
  • 1 cinnamon
  • 1 bay leaf
  • 1tsp dry kasuri methi
  • butter
  • coriander leave

 As a first step, heat a pan and fry wheat flour on very low flame till it changes color slightly,  add 2 big spoons of oil. By adding little water bring it to gravy consistency , also add 2 cloves, 1 cinnamon , and 1 bay leaf. Remove it from heat and keep aside. Lets refer this as GRAVY1.

 Add oil in heated pan, add ginger-green chilly paste and fry. Add turmeric, read chilly powder, garam masala and fry the same. Add pinch of salt and sugar. Then add tomato puree and fry. Lets refer this as GRAVY2

Now remove cloves, cinnamon and bay leaf from GRAVY1 , and add GRAVY1 to GRAVY2. Remember if GRAVY1 has dried out you can add little water to it. Then add steamed vegetables. Mix and fry this all.

As a last step, add dry kasuri methi, 1 big tablespoon of butter, and finely chopped coriander leaves.

And you are done !!!!
