Apple Paneer Salad with toasted pisatichio

Hi der !

I know , long time ! Been busy with many cake orders . But I have decided I am going to blog more often now :) So I have these days when I realise I am putting on weight ;) and suddenly I start eating healthy stuff :D Hence the salad :P You can have this 1 salad bowl at dinner and it has enough proteins and fibre which will not make you hungry and also you wont put on much weight and this is good reason to say yes to apple for those who dont like apples :D ! Try it out and let me know ;)



Ingredients 
1 Apple(use crunchy apples)
1 Tomato
Paneer (100gm) , cut into small cubes
1 tsp Lemon juice
2tblsp pistachio
Salt and Sugar to taste
1tsp Oil for frying 
1 tblsp tomato sauce

Procedure 
1. Cut apple into thin long strips , and drizzle lemon juice over it so that it doesnt get brown and keep in fridge for sometime. They will remain crunchy this way.
2. Add salt and pepper to paneer cubes and add 1 tblsp of tomato sauce to this mixture. Now on a hot pan , drizzle very little oil , (about 1 tsp)  and fry these paneer cubes  till they start browning .
3. Also dry toast pistachio for around 3 minutes , remove from heat , let it cool. Then just crush dem roughly.
4. Now to assemble .. cut tomato , add apple strips  , salt and sugar to taste and mix properly. Put salad in bowl , add paneer cubes and toasted pistachios.

Bhindi Raita / Ladyfinger Raita

Hi der !

Today I am sharing a simple receipe for Bhindi lovers ! I love crispy Bhindi fries .. you too ? then you  will love this receipe. Its not a main dish though , to be accompanied by veg pulaav or masala bhaath or with rice curry also. Try and let me know :)


Ingredients :
  • 10 Bhindi / Ladyfingers
  • 1 green chilly finely chopped
  • 1 tblsp cumin seeds(jeera)
  • 1 tblsp mustard seeds
  • 1 tsp asafoetida (hing)
  • 1 cup curd
  • 2 tablespoon ghee/oil
  • 6-7 curry leaves
  • Salt and sugar to taste 
  • Finely chopped coriander leaves  

Procedure :
1. Chop Bhindi into thin slices horizontally and a pinch of salt to this.  In a pan ,1 tablsp oil and add finely sliced bhindi and green chilly. On medium heat fry these till they turn crispy brown. Remove on a plate to cool.
2. In a bowl , slightly beat the curd and add salt and sugar as per taste.
3. To prepare tempering , heat oil/ghee in a small pan, add jeera , mustard seeds, hing and curry leaves. Once mustard seeds stop spluttering turn off heat .
4. Add crispy ladyfingers to it and mix well. Pour the tempering over this and garnish with coriander leaves. Done ! Serve with pulaav or biryani !

Note : You can fry bhindi and keep , but see that you mix it with curd just before serving.

Cheesy Caramelized Onion Egg Sandwich

How are you'll doing ? :) I am at home these days .. not at work :( Got upper back problem and resting at home. Its pretty boring actually , as I am told not to sit for long hours and being IT engineer I cant avoid it . Duno how I got this back problem because I always took care about ma posture and ma laptop/desktop screen or chair alignment .. But as my doc said .. You all IT people have this gifted !! :( And we all are so addicted to PC and mobile its so difficult to not sit for hours :D But because of this back pain I realized actually how much time I have .. and so many other things I can do other then checking discounts on shopping sites , whtsapping .. checking status and DPs, checkin FB .. So I have a lot of time now :D So today for breakfast I made this easy sandwich , which fills you up till lunch ! Just one sandwich is enough . Its full of proteins and carbs.




Serves : 1
Makes : 1 Sandwich
Preparation time :5 min
Cooking Time :10 min
Ingredients :
  • 1 Fried egg with salt and pepper sprinkled
  • 1 medium onion sliced finely
  • 1 Amul cheese slice
  • 1 tablespoon tomato ketchup
  • 2  Sandwich bread slices
  • 1 tablespoon butter
  • 1 tablespoon oil
  • Salt and pepper to taste 
  • Finely chopped coriander leaves (optional) 




Procedure :
1. In a pan , add oil and finely sliced onions. To this add salt and pepper and cover pan with lid and cook till onion is seen translucent or just cooked on medium flame. Then on high flame , with continuous stirring , fry onions till they are brown and caramelized . You can then add coriander leaves.
2. Now take one slice of bread , apply tomato ketchup and place the fried egg on it.
3. Spread the caramelized onion on top of it , place the cheese slice and finally the bread slice and press it.
4. Now apply butter on outer sides of  bread slices and either grill it on sandwich maker or place it on hot tawa till both sides are crisp brown. I prefer tawa ! 

Sandwich is ready !! Enjoy

Paneer & Cheese Stuffed Veg Cutlets

Hey guys .. I am back :) Last week was exciting as well as boring. Exciting because I made a superdelicious pineapple upside down cake , recipe of which I will post next ... & boring because I had back pain n I had to take leave and couldnot go to office. And to add to this , I bought wrong mobile. :( I am super sad.. ohh yeah !! A mobile means a lot to me .. I always do a lot of research before I buy a mobile and I am always proud abt it. Last mobile I was using was HTC  Desire X which had an awesome  camera , lovely headphones and sound and real smooth touch .. probably the best phone I had. But since I dint put any scratch guard for it and handled it reallly rough the screen behaved preety badly for last few weeks for which I got frustated and just went in a shop and grabbed Samsung Galaxy Core Prime and its a real disaster which I released next day ! Now its on OLX and quicker .. waiting for someone to call :D:D

Anyways , We had a long weekend this time due to Holi on Friday and was busy because of my best friend's engagement. It was real fun ! On Sunday my cousin paid a visit at my place so tried out this cutlets which turned out amazing ... Hope you'll like it too


Serves : 4
Makes : 8 Cutlets
Preparation time :10 min
Cooking Time :15 min
Ingredients :

  • Cutlets :
         Boiled and grated or mashed
         (3 Potato + half Beet Root + 1 Carrot )
         1/2 tsp jeera powder
         1 tsp coriander powder
         1 tsp ginger garlic paste
         1 medium onion , finely chopped
         1 green chilly , finely chopped
         2 tablespoon corn flour  mixed in water
         1 tsp Garam Masala
         1/4the cup chopped coriander leaves
          2tablspn Corn Flour
          2tablspn Rice flour          
         Salt to taste


  • Stuffing 
         5 tablespoons of grated paneer
         2 Amul cheese Cubes grated
         some dryfuits like kaaju , kishmis finely chopped
         1/4 tsp garlic powder       

         Bread Crumbs
         Oil for shallow frying

Procedure
1. Heat a pan , add 1 tablespoon of oil and fry onion and green chillies till onion turns translucent.

2. Remove it from heat and add into a bowl. To this add all ingredients mentioned under Cutlet section and mix well

3. Also mix all ingredients mentioned under Stuffing and keep aside.

4. Now make balls out of stuffing mixture and flatten them .  Now take the cutlet mixture , make balls out of it , flatten it and in the center add stuffing and cover it well . Dip your hands in water when you are working with Cutlet Stuffing, so that it doesn't stick to your hands. You can even shape the cutlets as you want using cookies cutters.

5. Next dip the cutlets in mixture of water and cornflour and then roll them into breadcrumbs. Keep the cutlets in fridge for around 30 min and then shallow fry till golden brown. Serve with chutney or tomato sauce.

Veg Healthy Kathi Roll

Hi all .. I was at home today and wanted to eat something nice for snacks. In Goa , Most of the Hindus follow some days like Monday, Thursday as respect to their respective Gods and we do not eat any non veg items neither we eat onion - garlic. So on such days , it becomes very difficult for some of us to think what to cook ? So I tried this veg rolls which are kind of modified version of Kathi Rolls. Kathi Roll is a street food from Kolkata, in which skewer roasted kebabs are wrapped in a paratha. Slurrrp.. But since I am pure veg today , I came up  with this healthy and no onion no garlic recipe of Veg Kathi Rolls. I am sure you'll will like it. I prepared some easy cutlets which I replaced instead of Kebabs and you can use Roti/Chapati instead of Paratha.

Serves : 4
Makes : 6 Rolls
Preparation time :10 min
Cooking Time :10 min
Ingredients :
  • Cutlets :
         Any choice of your vegetables , grated . I used below combi
         (Potato + BeetRoot + Carrot )
         1 tsp jeera
         pinch of Hing/ Asofoetida
         1 tsp finely chopped green chilly
         1 tsp grated ginger
         1 tablespoon rice flour / corn flour
         1 tsp Coriander powder
         1 tsp Garam Masala
         1/4the cup chopped coriander leaves
         1 tsp Everest Chaat masala
          Rawa
         Salt to taste

  • Pickled 2(Chop below veggies as long strands)
          Finely chopped cabbage, capsicum , carrot
          1 tablespoon lemon juice
           Salt to taste         

4 Chapati/ Roti/ Paratha


Procedure
1. Mix all ingredients mentioned for Pickled veggies and keep, so that vegetables start getting moist yet crunchy

2. Take a pan with a very little oil and place on gas on medium heat. Add jeera seeds and saute for 30 seconds. Then add Hing powder , ginger and all grated vegetables and saute for around 4 min.

3. Remove the pan from heat and allow the mixture to cool. After its cooled down , add  finely chopped chilly , Garam Masala , Chaat Masala , Coriander Powder , Rice flour , Coriander leaves and salt to taste. Ensure that the mixture is semi dry, if not you can add more rice flour to it.

4. Now make balls out of this mixture and flatten them on Rawa to make small cutlets. Shallow Fry this cutlets till done on both sides.

5. Now take a Chapati and apply butter and sprinkle pepper powder on it. Place the pickled vegetables on the  chapati  and pieces of cutlets. Now Roll the chapati. Done Kathi Rolls are ready to be served.

French Onion Soup

Its been a long time ! I was busy with work and a new venture that I have started ! Yes .. My love for baking inspired me to bake cakes not only for my family but also spread this happiness into lives of others :) I take orders now for birthday , anniversary or any occasion cake . I had no clue I would be doing this any time , but it started somehow and now there is no looking back. I will soon share some delicious yet easy cake recipes. For now , I am posting this soup which I tried yesterday. This soup is very light and gives you enough warmth in winter yet doesn't fill you up. Happy cooking :)




Servings : 4
Preparation Time : 5 min
Cooking time : 20 min
Ingredients :
2 medium sized onions (finely chopped)
2 garlic pods finely chopped
1 tablespoon butter + 1 tablespoon oil
1 tsp fresh pepper powder
1/4 cup finely chopped coriander
1 tablespoon soya sauce
1 cup of milk
4 cups of water
1 veg Maggie Cube
Salt to taste

Procedure :
1. Take a non stick pan and put butter and oil and turn on the gas on medium heat . Add chopped onions once butter has melted and saute till onions are browned. (If you have induction cooktop then this can be done in 4-5 min which takes otherwise a bit longer on gas ) Tip : For onions to cook fast , cover n cook & secondly add pinch of salt.

2. Add chopped garlic to browned onions and saute for a minute.

3. Now add 4 cups of water, soya sauce , maggie cube and pepper powder.

4. Once this water starts boiling add milk. Taste before you add salt at this step, since we added maggie cube which also has salt, hence add accordingly

5. As the soup comes to a boil , add fresh coriander leaves to this . Soup is ready !!! 

You can serve this with toasted bread with cheese grated on top. If you are diet conscious you can have it as it is .
